Sautées and caramelized Baby Potatoes…

There is a strange and magical quality of potatoes; you will rarely find anyone who dislikes them or refuses to eat them.
They are in almost every major continental diet in some form, and they can be prepared in dozens of ways, including baked, fried, sliced, mashed, and many more. My daughter who is extremly fussy about eating vegetables, thankfully loves to eat potatoes and I think it’s a case with almost every child, because even we as adults would never mind to have potatoes as French fries or as a veggie at any point of time in some form or the other.
Potaoes are the easiest to cook and goes well with almost any dish in the form of main Ingrediant, starter or even as salads.
Sautéed and caramelized Baby Potatoes can be served as a main dish with simple dal and rice for lunch or dinner or simply as a starter.

- Yields: 3-4 servings
1Wash and clean 200grms of baby potatoes with water.
2In a pressure cooker boil the baby potatoes with 4-5 cups of water and a pinch of salt for about 5-7 mints on a medium-low heat.
3After 2 whistles on high flame, switch OFF the stove. Do not open the lid of the cooker till it has pressure in it. Let all the steam go OFF on its own.
4Once steam has vanished, open the lid of the cooker and check whether Potatoes are properly boiled or not. Check by inserting a knife in any one potatoe if it is cooked thoroughly.
5Strain all the water from the potatoes and let them dry and cool at normal room temperature. Cut each baby potatoes in two equal pieces without peeling the skin of the baby potatoes. In a non stick pan heat 2-3 table spoons of olive oil, once the oil is hot sauté the sliced red onions till they turn golden brown in colour. Now add the boiled baby potatoes and sprinkle some salt,oregano powder, red chilli flakes as per the taste and drizzle 2 table spoons of honey and mix the potatoes and sliced onions thoroughly.
6Turn off the heat and garnish the baby potatoes with fresh coriander leaves. Serve this dish Hot as a starter or with simple dal and steamed rice for simple lunch or dinner.
