Ratatouille – traditional french recipe

La Ratatouille is a tranditional french dish which is prepared by a simmering de mediteranee vegetables with a little 'of olive oil. Ideal like a side dish, it can be used like à starter too.

  • Prep: 15 mins
  • Cook: 30 mins
  • Yields: 6 a 8 dishes


1Cut tomatoes, onions, eggplant, peppers and zucchini into thin slices about 8mm

2Finely chop the garlic

3Heat the olive oil in a pan and fry all the ingredients except the garlic and herbs.

4When the ingredients becomes juicy and lose color because of cooking, incorporate garlic and herbs without the rosemary

5Let stand for 5 minutes and transfer to a baking dish. Add the rosemary and bake at 200 ° C for 10 to 15 minutes.


1 eggplant

1 zucchini

2 tomatoes

1 onion

1 green pepper and 1 red


olive oil

oregano, rosemary, thyme, parsley, etc.
