Simplest vegan pancakes EVER !

Prepare large vegan pancakes, easily, and quickly. Ready, steady, cook !
For quality time with the family over a nice meal ...

  • Cook: 15 mins
  • Yields: 4 personnes (11 crepes)

Directions

1In a large bowl, mix the flour, starch, salt and sugar.

2Make a well in the middle and pour the oil in. Mix gently.

3Add the milk little by little, while mixing, to avoid lumps.

4Finally, add the water, and mix until smooth and light.

5Set aside for 2 hours approximately, at room temperature. This will give the batter its elasticity.

6Mix again. The batter might be thicker. You can add more water to give it the same lightness as before.

7In a pan, heat a few drops of oil, and when hot, pour a portion of batter in the pan and spread it evenly around the pan. Let it cook for 2 to 3 minutes.

8Turn the pancake over and let it cook for a further minute.

9Repeat until no batter is left !

Ingredients

350 g regular flour

50 g starch

2 tablespoons vegetable oil

45 cl vegan milk (almond milk, soya milk, with or without flavour)

25 cl water

Optional

1 teaspoon salt

2 teaspoons sugar (if you chose a rice milk as your milk option, sugar won't be needed, for example).

Any flavour essence you chose, if making sweet batter: vanilla, almond, orange blossom, cinnamon, lemon... Or spices for a savoury batter: cumin, nutmeg, garlic...
